I am going to get back into home brewing. If you are into home brewing, check it out. One of the common suggestions I have been reading is water quality. Yes, sounds silly to brew with high quality water since beer is 90-95% water. But just what do you mean exactly by high quality water in relation to the chemistry of the brewing process? Great, brah! Okay, I am willing to help you in any way and even let you brew on my 15.5 gal system (all grain or extract) if it helps you get back up to speed. For a small consideration in beer, of course. Water can change flavor depending upon the minerals and ph present. Most beers with very subtle or fragile flavors (Pilsner Urquel, Belgians etc) are brewed with a very soft water. PH really comes into play during the mash. Get the New Joy of Homebrewing by Papazian. Charlie is an expert and his book helps a ton. Also, check out the Brews and Views on www.hbd.org. Many master brewers frequent the board and your answers can range from basic to scientific on any given question. These folks alone have taken my beer to new levels. Also, if interested, you can attend a club meeting and get the skinny and tricks from other brewers face to face. Lastly, find a good brew shop. I recommend Beach Cities in Costa Mesa (open only on weekends) as he doesn't gouge and is a cool cat. Not only that, he is in my brew club as well. More questions? Hit the email. But, if you bring Jiffy to brew and he rides his bike in my living room again, it will cost you double in beer.

Equipment and such: Promash (www.promash.com) is invaluable.
7 or 15 gal pot
Fermenters (only one if you are doing 5 gal batches)
A sanitizer like Idophor.
Mashtun (all grain)
Wort Chiller (don't mess around with other ways)
Kegs and Kegerator (skip bottling except for competition). Kegs are becoming scarce as China is buying them for the stainless. Get 'em quick if you go that route. Again drop a line if you need a supplier.

I'm still investigating the best Oregon suds (a very, very long investigation) but it is safe to say to check out the Deschutes line of brew-rific hop products. (did I just say brew-rific?)

Rogue ...and that is just the bottlers. The brewpubs are amazing and there is some seriously creative brewing going on there. When I am up there visiting my builder (On Topic of bikes) Vanilla Cycles or a buddy, (again On Topic of bikes) The Metal Cowboy, we always try something new, old or both. The rule of a good brew area is if they grow quantities of hops there, the beer will be good, if not better. Now, if you'd asked about Washington I could write you a book...

Good call on Bridgeport and Full Sail! Man, I haven't been to the Yardhouse in a loooong time, they have Full Sail on tap! Also, I would officialy like to ask you about Washington suds. Spill the dirt, Brew man.

The real deal in a bottled IPA. Anderson Valley has always been good, albeit middle of the road. They've released an IPA called Hop Ottin' that Ken Hollingshead turned me on to last weekend when I stopped in for lunch. Good. Hoppy. Bitter. Even bit (which is very difficult to maintain) of dry hop aroma. I thought that it was keg only but walked into my local Von's and there is was, a starin' me down. It is good. Dare I say great? It is an IPA that rivals some of Stone's more aggressive products. This is one of the better IPA's (American style) on the market. Get it. Drink it. Be happy and hoppy.

Bottled IPA's are difficult to find anything other than mediocre. If you don’t mind traveling to BevMo or a good store, look for Hop Rod Rye IPA. Also check out the Bayhawk offering (they brew a lot of the IPA’s for local brewpub chains). Some others swear by the Dogfish Head IPA but it isn’t in my top 10. The obvious Stone products are always above par and Ale Smith usually has a good bottling. Most of the above can only be found in 22oz bottles.
